

Chives (Allium schoenoprasum) are the smallest species of edible onions. They are native to Europe, Asia and North America. In fact the perennial is the only species of Allium native to both the New and the Old World.
It is very easy to grow, it will self-seed if you let it and it will even grow in a window-ledge pot. Once it has flowered is has no further culinary function and should be cut back to produce more edible shoots.
Chives leaves (straws) are shredded for use as a condiment for fish, potatoes and soups - wonderful in tomato soup. It is also very good chopped up in omelets. The flowers have a certain ornamental charm and can be bundled up with other summer flowers to make nice posies.
